Bean Salad


If you read yesterday's post, you'll know I'm trying out some new recipes. Those that are success stories, Ill share with you. Those that aren't, Ill get take out pizza and pretend it never happened.

Over the holidays, our friends Katie and Alex shared a simple bean salad with me that is delicious. I've seen similar recipes on Pinterest, but I like this one because it doesn't require a vinaigrette or dressing- just plain old fresh ingredients. I don't really like tomatoes unless they are smothered in cheese, dressing or sauteed, so I opted out of using them and used chick peas instead.

 
 
 
 
Here is what you need:

1 can dark beans (ex. black), drained and rinsed
1 can light beans (ex. northern), drained and rinsed
1 can corn, drained and rinsed
1 package of cherry tomatoes
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
1/2 medium onion, chopped
juice from 1 lime (~2Tbsp)
salt/pepper to taste

*substitute any vegetable for any vegetable

Chop and mix. For best results, allow to sit overnight, it brings the flavors together more.

I have eaten this for lunch the last two days and love it. I either take tortilla chips with me or a spoon. Either way, easy peasy and yummy!
